Hello, I have over 25 years of vast experience in the culinary field. I began my culinary career at age 15 busing tables and washing dishes at my hometown Italian restaurant. After high school, I then attended Johnson & Wales University where I graduated with honors receiving a bachelors in Culinary Arts. While attending school for 4 years, I also worked in different fine dining restaurants to enhance my culinary education. I then moved to Sonoma, California where within a year I worked my way up to the Executive Chef position at The Plaza Bistro. After three years of creating seasonal menus and wine lists, I then took an opportunity to become the Executive Chef of Broadmoor Country Club in Indianapolis, Indiana. At Broadmoor Country Club I expanded my culinary skills as a Chef by simultaneously overseeing banquets and creating menus for the formal dining room. During the seven years at the county club I also pursued my passion for personal growth in the culinary field by teaching culinary students at The Art Institute of Indianapolis. After having our first daughter we decided to move closer to my wife's family and relocated to the Santa Cruz Area. I'm currently the Chef/Owner Roux Dat Cajun Creole and have been in business for the past 10 years. When I'm not at the restaurant I enjoy cooking a variety of foods and flavors for friends and family alike.
