Ingredients
1poundground turkey
1cupbrown ricecooked according to package directions
4cupscoleslaw mix
1medium carrotgrated
2clovegarlicminced
1tablespoonlow-sodium soy sauce
1tablespoonrice vinegar
1teaspoonsesame oil
1/2teaspoonground ginger
2stalkgreen onionsliced

1tablespoonsesame seeds
Instructions
Cook the brown rice according to package instructions
In a large skillet or wok, heat the sesame oil over medium-high heat. Add the ground turkey and cook until browned, breaking it apart with a spoon (about 5-7 minutes).
Add the garlic, carrot, and shredded cabbage to the skillet, and cook for 3-4 minutes until the vegetables soften.
Stir in the soy sauce, rice vinegar, and ground ginger. Cook for an additional 2 minutes until well combined and heated through.
Serve the turkey mixture over the cooked brown rice. Garnish with sliced green onions and sesame seeds, if desired.
Reheating Instructions
Heat in a saute pan over medium heat until heated through, or in the microwave on high power.
